I don't know why, but I feel like this guy would be an easier catch than most other fugitives on The Hunt. If he were to be spotted in Mexico or some other central/south american country, how would that extradition work?

Depends on which Central or South American country since some are on friendlier terms with us than others.
On Walsh's former show America's Most Wanted the main problem with Mexico and extradition specifically was they would only arrest/extradite in some cases if they had a specific definitive address. Several fugitives such as Desiree Lingo-Perkins had basically the neighborhood they were believed to be in pinpointed for years but Mexico wouldn't do anything until they had the exact house or address they were staying in. They won't investigate for us if more detail is needed.
I assume it could be the case with other countries as well.

I'm going through an online document website called Scribd right now seeing if there are any reports relating to fugitives on this site or fugitives we could potentially profile, and I found the UFAP document for Jorge Rueda Landeros's arrest. Always amazing how brazen some of these guys are (and how they still remain on the run for so long in spite of it) - Landeros seemingly didn’t change his appearance much, went back to Mexico as you’d expect, and continued to be heavily involved in yoga

Yeah some fugitives basically think they're untouchable and they don't try to hide- thankfully Landeros was not untouchable.
